After eating out most days, I decided to pull out all the veggies in my fridge and make them lunch. This is the first time in a long time that I have been able to have a rather healthy lunch here at home.
Quite simple but tasty!
Cherry tomatoes, oriental sweet potato, and lotus root (yangeun?). The lotus root is marinated in a soy sauce kind of brine and then served. Sweet and salty together means a happy me 🙂
